Starting Off the New Year Right

After yesterday’s dim sum chow down, I decided to have something a little light. Also to start off the new year with more greens than normal. Here’s my salad from last night. A fairly simple salad with romaine, spinach, arugula, tomatoes, shredded chicken, and olives.

While I enjoyed the meal, it didn’t keep me warm during this cold winter nights. Chicken salad begins with leftover roast chicken and then you can add other ingredients you have in stock. In this case, the olives didn’t really match the chicken (I marinated the chicken in lemon juice and then roasted it). I would have enjoyed it more with asparagus.
