I received a bag full of organic vegetables the other day. There were collard greens, onions, garlic, squash, carrots, and this item below. Help! I’m not sure what it is and I was hoping one of you out there knows. I’ve taken a picture from the top, side, and a cross section.
The outside is this yellowish color and the texture is smooth and slightly waxy. I smells like a cucumber and tastes almost like one. The texture is also like a crisp cucumber and the seeds are really hard.
I’m about to saute it in some butter to see if it’s a squash. Do any of you know what it is?
Looks like a lemon cucumber.

As far a flavor goes, it doesn’t taste like a lemon. It just looks like one. The “organic” one I received was pretty plain tasting. Not sure if I’ll get another one. The seeds were pretty hard and after peeling it and removing the seeds it looks like regular cucumber pieces.
