I found these purple cauliflower in the market the other day. The color was a light purple but after cooking it became a darker purple. The taste was just like any other cauliflower. However, there was a little more bitterness to it. I might have undercooked them but it didn’t bother me too much.
Here’s the recipe I used.
Ingredients
1 head of cauliflower
2-3 cloves of garlic, peeled and coarsely minced
Lemon juice from half a lemon
1/2 coriander
Olive oil (enough to coat the cauliflower)
Coarse salt and freshly ground black pepper
Parmesan cheese
Method
Preheat oven to 400°F. Separate the cauliflower into florets and put in a bowl. Add garlic lemon juice, salt, pepper, coriander, and olive oil in bowl. Toss to coat the cauliflower.
Place cauliflower on a baking sheet in a single layer. Bake for 25-30 minutes, or until the cauliflower browns. Test for doneness. Remove from oven and sprinkle Parmesan cheese.
