One of the things I really don’t think about when it comes to catering and big menus are salads. To me, it’s just a bunch of green stuff with some kind of dressing on top. That’s probably why I don’t get many raving reviews on my salads. Also, I think there’s a certain level of creative goodness when you make a bulk salad. With that said, I’m still on my quest to make a really great tasting salad that serves 100+. Let me know if you have any ideas.
For now, I’ll share with you one of my secrets when I serve salad. I take normal lettuce, carrots, and tomatoes and make them look presentable and then add my favorite dressing: Angelo Pietro. This is the only time I get asked how I made the dressing. I humbly reply and say that it was store bought and give the brand.
This dressing is all natural, contains no MSG, no cholesterol, and no preservatives and made in the USA. I’ve tried all the flavors: Original, Sesame Miso, and Ginger. I can’t tell you which one I like the most. They all serve a purpose. Most of you know that I will once in a while use salad dressing to marinade meat. I’m tempted but I haven’t found a piece of meat worthy of this dressing.
What I like the most about this dressing are that the flavors are delicate yet they complement strong flavored greens like dandelion or arugula. For me, it’s about the addition of Japanese flavors like miso and ginger. These additions make for a well-rounded flavor that reaches all taste buds.
