This year COVID19 Easter means we did not hide the eggs and went straight to deviled eggs. Deviled eggs are easy and great comfort food during this shelter in place.
INGREDIENTS
1/4 cup mayonnaise
2 teaspoons relish
1 teaspoon yellow mustard
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Ground Paprika for decoration
Green onions for decoration
METHOD
Boil the eggs and make sure they are hard-boiled. Once it’s done, remove them from heat and leave them in the water for another 15 minutes. This ensures the hardness. Then take them out and put them in an ice bath.
Remove the shells and cut each egg in half lengthwise.
Remove the yolks and put them in another bowl.
In that bowl, add the mayo, mustard, salt, pepper, and relish and mix well.
Put the mixture into a sandwich bag, cut off a corner and squirt the yolk mixture into the egg whites. Sprinkle with paprika and green onions.
