I’m practicing more on my competition-style chicken. While I would love to use a muffin tin to make my thighs look uniform, I believe that the smoke will not penetrate to give the chicken a full flavor.
Take time to trim off the fat. Then carefully roll up the thigh with the excess skin. Wrapping will help keep them moist.
