My Japanese friends will disown me for posting this but these are COVID times and we have to make do with what we have. I was craving Takoyaki but for some reason, we could not find the takoyaki pan. Then we thought of doing okonomiyaki. Turns out we did not have any eggs, cabbage, and burdock either.
After taking inventory of ingredients and what makes okonomiyaki. We ended up using pancake mix, red ginger, green onions, kale (from the garden), octopus, and dashi. From what we know of the pancake mix is that it contains flour, baking powder, some kind of egg substitute, sugar, and salt. Oh, we also ate the last pack of bacon for breakfast.
The process…dice up the octopus into bite-sized pieces. Make the pancake mix per directions but instead use a mixture of water with dashi. Add chopped kale, octopus, green onions, and red ginger to the mix. Cook like a pancake.
Remove from heat and top with mayo, okonomiyaki sauce, bonito flakes, and more green onion.
Would I do it again? Hopefully not but this was definitely a good use of ingredients.
