I decided to make some Puerto Rican Beans because…I was hungry. Here’s a quick recipe to feed a big group.
Ingredients
1 tablespoon olive oil
1 large onion diced
1/2 pound of bacon or salt pork chopped
6 firm chorizo diced
1 teaspoon cayenne pepper
2-3 teaspoon minced garlic
2 teaspoons smoked paprika
2 teaspoons cumin
3 dried bay leaf
1 green bell pepper chopped
3 medium tomatoes diced
2 bottles sofrito 12oz
4 cans kidney beans
2 cups chicken broth
4 medium potatoes diced in .5″ squares
2- packet Goya Sazon with coriander
1 teaspoon coriander if you don’t have the sazon with coriander
Method
In your pressure cooker, add oil, bacon, and onions over medium heat
Sautee until the bacon browns.
Add everything.
Seal the pressure cooker and cook for 60 minutes.
