Here’s my secret to hard boiling eggs. Poke a little hole at the bottom (the big end) where there is normally an air pocket.
This allows the air to escape and it also brings in a little water to help separate the shell.
You can use a pin to pierce the shell. Don’t go in too deep or else you’ll puncture the white part.
