Shun Hikari Chef’s Knife

Just added this knife to the collection and it’s pretty sharp! Not just sharp but light and easy to use.

The Shun Hikari Chef Knife is a Williams Sonoma exclusive and was named 2016’s Kitchen Knife of the Year. True to the form, this knife performs well.

Here are some stats.

  • Dual core construction (71 alternating layers of VG10 & VG2 stainless steel) for an exceptionally sharp, long-lasting edge.
  • “Hornet’s nest” Damascus pattern adds beauty, and assists in food release.
  • The Shun-sharp 16° edge (each side) makes food prep fast and easy.
  • Full composite tang for strength and balance.
  • Angled, polished bolster encourages comfortable chef’s grip.
  • Birch Pakkawood handle with an attractive satin low gloss finish is contoured for a secure, comfortable grip.
  • Embossed endcap adds beauty and balance.
  • Dual-core stainless steel blades are clad on each side with 71 micro layers of high-carbon, high-chromium stainless steel to create a “hornet’s nest” pattern reminiscent of a Damascus-style blade.
  • Exceedingly sharp cutting edges, hand-sharpened to a 16-degree angle, are long-lasting and easy to maintain.
  • Polished bolster promotes a comfortable chef’s grip.
  • Durable birch PakkaWood handle resists moisture and bacteria and has a beautiful low-gloss finish.
  • Embossed endcap adds beauty and balance.
  • Handle offers a superb grip for both left- and right-handed users.
  • Handcrafted in Japan.

In Japanese, “Hikari” means “light” or “illumination” and the Shun Hikari series is distinguished by its beautiful light-colored birch Pakkawood handle and stunning “hornet’s nest” blade pattern.
