I was craving some Disneyland or State Fair style turkey legs so I decided to make my own. Making turkey, like Thanksgiving take time and you want to make sure you brine the turkey before cooking. Here’s my turkey brine for smoked turkey legs.
Turkey Brine
- 1 gallon water
- 1/2 cup of your favorite rub
- 3/4 cup salt
- 1 cup sugar
- 3 tablespoons garlic powder
- 3 tablespoons onion powder
- 2 tablespoons dried thyme
- 1 tablespoons dried sage
- 2 tablespoons black pepper
- 1 teaspoon ground cloves
- 1 teaspoon ground allspice
- 1 tablespoon liquid smoke
- Dash of cinnammon
- Dash of ground rosemary
- 1 teaspoon chili powder
Method
All all the ingredients above and bring to a boil. Make sure the salt dissolves. Let it cool to room temperature. Some people put ice cubes in it to cool it off faster. Do this if you’re working on a deadline.
Get the turkey legs out and place them in the brine. Let them soak for at least 24 hours. This will give it time for the brine to soak in.
Smoker
Start up your smoker and set it to 225 degrees. After being on for about 15 minutes, place your turkey legs on the grill and cook for 4 hours.
Take them out. Let it cool for a few minutes and serve.
You’ll find that your turkey legs are better than the ones found at state fairs or Disneyland.
